Information about Romaine Lettuce
Romaine or cos lettuce (Lactuca sativa L. var. longifolia) is a variety of lettuce which grows in a long head of sturdy leaves with a firm rib down the center. Unlike most lettuces, it is tolerant of heat.
Romaine lettuce is often used in the Passover Seder as a type of bitter herb, to symbolise the bitterness inflicted by the Egyptians whilst the Israelites were slaves in Egypt.

Origin and etymology
Most dictionaries say cos comes from the Greek island of Cos, whence the lettuce was fist introduced. It may also come from from the Arabic word for lettuce, خس (IPA: [xus]); in Hebrew it is called Arab lettuce, חסה ערבית. It apparently reached the West via Rome, as in Italian it is called lattuga romana and in French laitue romaine, hence its other English name. (Davidson)Cuisine
The thick ribs, especially on the older outer leaves, should have a milky fluid which gives the romaine the typically fine-bitter herb taste. Salad mix recall
On September 17, 2007, Dole Food Company's Hearts Delight salad mix was found to be contaminated by E. coli. It was voluntarily recalled in nine U.S. states and Canada. The romaine, green leaf and butter lettuce hearts were grown in California, Colorado and Ohio, and processed at Springfield, Ohio.[1]References
